Oven-Fried Chicken

Ingredients
  

  • 4 large chicken breasts
  • 1 egg
  • 1/2 cup unsweetened almond milk
  • 1 cup crushed Mary’s Crackers
  • 1/2 cup brown rice flour
  • 1 tsp garlic powder
  • 1/2 tsp Mrs. Dash
  • 1/2 tsp paprika
  • 1/8 tsp pepper
  • 1/8 tsp sea salt
  • 1 tbsp butter

Instructions
 

  • Preheat oven to 350-370 degrees.
  • In a bowl or shaker cup mix together egg and almond milk. Transfer to a flat dish with sides.
  • In a small bowl add together flour and spices. Blend until thoroughly mixed together.
  • Blend crackers and flour mixture together and put in a separate flat dish.
  • Take one chicken breast and dip in liquid mixture. Let soak for one minute. Transfer to dry mixture and thoroughly coat both sides. Repeat until all chicken is coated.
  • Put butter on stainless steel baking sheet and set in oven until melted. Take out of oven and place chicken on sheet. Cook for 15-20 minutes and turn.
  • Serve with quinoa, brown rice or sweet potato and vegetables of your choice.
