Fresh Summer Bounty!!

A recipe I enjoy as a salad or cold dish on these hot summer days . Or warmed and lovely on a cool autumn evening by Deb Wolfe.

Fresh Summer Bounty!!

Servings 5 people

Ingredients
  

  • 3 cups cooked Indian basmati rice
  • 1/5 cups cooked bean medley canned or dried beans
  • 2 cups diced sautéed assert sweet peppers
  • 1 chopped yellow and red fresh summer tomatoes
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tbsp honey
  • Fresh chopped herbs (whichever you prefer I used fresh sweet basil)
  • salt & pepper to taste
  • Sliced ripe avocado
  • 4 seared herbed roast chicken breasts

Instructions
 

  • mix rice , beans peppers tomatoes ,red wine vinegar ,olive oil , honey salt, pepper and fresh chopped herbs .Gently toss together put to the side
  • Roast herbed chicken breast at 400 degrees for approx 15 20 min till juicy and thoroughly cooked let rest 5 to 10 min before slicing
  • Arrange grains on plate with sliced avocado and chicken enjoy!
