Ingredients

cooked Indian basmati rice

cups
cooked bean medley
canned or dried beans

diced sautéed assert sweet peppers

chopped yellow and red fresh summer tomatoes
1/4
cup
red wine vinegar
1/2
cup
olive oil
1
tbsp
honey
Fresh chopped herbs (whichever you prefer I used fresh sweet basil)
salt & pepper to taste
Sliced ripe avocado

seared herbed roast chicken breasts
Instructions
mix rice , beans peppers tomatoes ,red wine vinegar ,olive oil , honey salt, pepper and fresh chopped herbs .Gently toss together put to the side
Roast herbed chicken breast at 400 degrees for approx 15 20 min till juicy and thoroughly cooked let rest 5 to 10 min before slicing
Arrange grains on plate with sliced avocado and chicken enjoy!
